KAEL'S APPLE DELIGHT

Ingredients

2 Apples (peeled)
2 Mendjool Dates
Nuts (Sunflower-raw and unsalted, pumpkin seed)
1 tsp Ghee 
¼ tsp cinnamon
1 pinch cardamom or nutmeg

Preparation

Chop apples and put all ingredients into pot with ¼ cup water and cook until it is soft and creamy.  Eat 1 hour after food or at least 1 hour before other food.

ALMOND COCONUT BANANA BREAD

Ingredients

2½ cups Almond Flour
1 tablespoon apple cider vinegar
1½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon good-quality salt
1 teaspoon baking soda
3 pastured eggs
¼ cup maple syrup (optional)
¼ cup coconut oil, melted
2-3 very ripe bananas mashed
1 teaspoon pure vanilla extract
¼ cup chopped walnuts

Preparation

Preheat the oven to 350ºF.
Grease a large bread pan with coconut oil.
In a large bowl mix together the dry ingredients: almond flour, cinnamon, nutmeg, salt, and baking soda.
In a medium size bowl, whisk together the eggs and add vinegar. Add mashed bananas, coconut oil, vanilla (and maple syrup if wanted.) Whisk together until combined.
Stir the wet ingredients into the dry ingredients until combined. Fold in the chopped walnuts.
Pour the batter into a large bread pan and bake for 50-60 minutes until the center is firm.
Allow to cool for 10 min. Remove from pan.
Slice and enjoy with lots of pastured butter or ghee!
